Today, we would like to introduce "Abekan Hashira Shochu Brewing" by Abekan Shuzo, a famous sake brewery in Miyagi, Japan.
This sake goes well with hot sake at this time of year. Hashira shochu shochu brewing is a traditional sake brewing method that has been practiced since the early Edo period (1603-1868), in which rice shochu or sake lees shochu is added to sake unrefined sake or sake made in the top tank. The purpose was to increase the alcohol content, prevent spoilage, and prevent deterioration. Currently, brewing alcohol is added instead of shochu, and this method has become the mainstream.
Enjoy grilled Koshu Shingen chicken grilled over binchotan charcoal with carefully selected sake, shochu, and wine.
