This Hakumado-Tsurumi is a new sake made by bottling regular Tsurumi without filtration. Normal Tsurumi has a rich flavor, but because it is new and unfiltered, the flavor is intense.
The concept is to make the most sweetpotato syochu liqueur in Japan. Immediately after bottling, it has a strong gaseous smell, but gradually the gas is released and the shochu turns into a sweeter sweetpotato shochu.
